ドイツ語で「明るい」。ヘレスは、ミュンヘンの人々が最も日常的に飲んできた淡色ラガーです。
ヘレスとは
19世紀末、北のピルスナーの人気に応えるかたちでミュンヘンで生まれました。ただし、そのまま真似はしませんでした。ホップの苦味で競うのではなく、麦芽のやわらかな甘みを軸に据えたのです。
味わいの特徴
- パン生地やはちみつを思わせる、穏やかな麦芽の甘み
- ホップの苦味はごく控えめ
- 澄んだ淡い黄金色
- 飲み飽きない、まっすぐな味わい
ピルスナーとの違い
同じ淡色ラガーでも、力点が逆です。ピルスナーはホップ、ヘレスは麦芽。ピルスナーがきりりと苦く乾いているのに対し、ヘレスは丸く、やさしい。どちらが上ということではなく、目指している場所が違います。
なぜ難しいのか
味の要素が少ないぶん、ごまかしがききません。わずかな雑味も、そのまま表に出てしまう。シンプルなスタイルほど、醸造の技術がそのまま味に出ます。
まとめ
特別な日のためではなく、なんでもない日のためのビール。それがいちばん難しい。Craft Bearのビールも、大雪山系の湧き水から始まります。水の質は、淡色ビールほど正直に出ます。

What is a Helles?
It appeared in Munich at the end of the 19th century, an answer to the popularity of Pilsner from the north. But it did not copy. Instead of competing on hop bitterness, it built itself on soft malt sweetness.

How It Differs from a Pilsner
Same category, opposite emphasis. Pilsner leads with hops; Helles leads with malt. One is crisp and dry, the other round and easy. Neither is better — they are aiming at different places.
Why It's Hard to Brew
There is nowhere to hide. With so few flavour elements, the smallest off-note shows. The simpler the style, the more plainly the brewing shows in the glass.
Summary
Not a beer for an occasion — a beer for an ordinary day, which is the harder thing. Craft Bear's beers also begin with spring water from the Daisetsuzan mountains. Water quality shows most honestly in pale beer.
