エールでもあり、ラガーでもある。ケルシュは、ドイツ・ケルンの街だけが名乗れる淡色ビールです。
ケルシュとは
ケルシュ協定という取り決めがあり、ケルン市内およびその周辺で、定められた製法によって醸されたものだけがこの名を使えます。ワインの原産地呼称に近い考え方です。
エールとラガーのあいだ
上面発酵のエール酵母を使いながら、そのあと低温で長く熟成させます。エールの香りの豊かさと、ラガーの澄んだキレを、どちらも取りに行った造りです。ハイブリッドと呼ばれる所以です。
味わいの特徴
- 白ワインを思わせる、かすかな果実味
- すっきりと乾いた後味
- 穏やかなホップの苦味
- 色は明るく、澄んでいる
ピルスナーとの違い
見た目はよく似ています。飲むと、ケルシュのほうがわずかに丸く、果実の気配がある。ピルスナーはホップの苦味とドライさがもっとはっきりしています。
ケルンでの飲み方
本場では「シュタンゲ」と呼ばれる200mlの細い筒状のグラスで供されます。小さいのは、常に冷たく新鮮な状態で飲むためです。空になると、頼まなくても次が置かれます。

What is a Kölsch?
The Kölsch Konvention restricts the name to beers brewed in and around Cologne to a defined method — much like a wine appellation.
Between Ale and Lager
It ferments warm with ale yeast, then conditions cold for a long time. The aim is to take the aromatic generosity of an ale and the clean snap of a lager, both. Hence "hybrid".

How It Differs from a Pilsner
They look alike. In the mouth, the Kölsch is slightly rounder, with a hint of fruit; the Pilsner pushes hop bitterness and dryness harder.

From a stange — a slim 200ml cylinder. Small, so it is always cold and fresh. Empty it and another appears without your asking.
