The drive to Asahidake Gensui takes us through some of the most peaceful countryside in Hokkaido. Even after doing this trip dozens of times, there's something almost meditative about watching the landscape change as you climb higher toward the mountains. The farms give way to forest, the air gets crisper, and somewhere along the way, you remember why you're doing this in the first place.
朝、目覚ましが鳴った瞬間、今日は良い一日になると分かる朝があります。この朝もそうでした。ただ、午前5時の起床は任意ではありませんでしたが。水を汲みに行く日でした。
旭岳源水への道のりは、北海道で最も穏やかな田園風景の中を通ります。何十回もこの道を走っていますが、山に向かって登るにつれて風景が変わっていくのを見ると、いつも瞑想的な気分になります。農地が森に変わり、空気が澄んでいき、いつの間にか、なぜこれをしているのか思い出すのです。
Asahidake Gensui isn't just any water source. In 2008, it was designated as one of Japan's 100 Famous Waters—part of the prestigious 平成の名水百選. The spring flows at an incredible 4,600 litres per minute, fed by snowmelt filtering through volcanic rock over decades. By the time it reaches the surface, it's been naturally purified and mineralised. And cold—a constant 6 to 7°C year-round, even in the height of summer.
We collect about a ton of water each trip, filling container after container until the truck sits heavy on its wheels. It's physical work, but there's a rhythm to it. Fill, cap, stack, repeat. Sometimes locals stop by to fill their own bottles, and we'll chat about the weather, the season, how the water tastes different in spring versus autumn (it does, genuinely).
旭岳源水はただの水源ではありません。2008年、「平成の名水百選」の一つに選ばれました。この湧水は毎分4,600リットルという驚異的な量で流れ出ており、数十年かけて火山岩を通過した雪解け水が源です。地表に到達する頃には、自然に浄化されミネラルを含んでいます。そして冷たい—真夏でも年間を通して常に6〜7°Cです。
一回の採水で約1トンの水を集めます。容器を次々と満たし、トラックがずっしりと重くなるまで。肉体労働ですが、リズムがあります。満たして、蓋をして、積んで、繰り返す。地元の人がボトルを持って立ち寄ることもあり、天気や季節、春と秋で水の味が違うこと(本当に違います)について話したりします。
Then comes the careful drive back down, delivering our cargo to the brewery where it'll become the heart of our next batch. Every bottle of Craft Bear beer starts right here, at this mountain spring, collected by hand.
Could we use tap water? Sure. Would it taste the same? Not a chance. Some things are worth the extra effort—and at 5am, watching the mist rise off the mountains with a flask of coffee in hand, you remember that the extra effort is kind of the whole point.
